Ingredients –
For the Chicken & Herbs:
โข 500g bone-in chicken thighs (or drumsticks, skin-on for extra flavor)
โข 5-6 red dates (็บขๆฃ) โ pitted, for natural sweetness
โข 1 tbsp goji berries (ๆธๆ) โ soaked briefly in water
โข 3-4 thin slices of ginger โ for warmth & digestion
โข 2-3 small pieces of angelica root (ๅฝๅฝ) โ optional, but adds depth
For the Marinade:
โข 1 tbsp light soy sauce
โข 1 tbsp Shaoxing wine (or dry sherry)
โข ยฝ tsp white pepper powder
โข 1 tsp fish sauce (for umami)
โข 1 tsp sesame oil
โข 1 tbsp oyster sauce
โข 2 tbsp water (to balance the saltiness)
Cooking Steps –
1. Marinate Like You Mean It
In a mixing bowl, combine all the marinade ingredients โ soy sauce, rice wine, white pepper, fish sauce, sesame oil, oyster sauce, and a splash of water. Add the chicken and coat it evenly. Let it marinate for at least 1 hour, or overnight for deeper, richer flavor.
2. Give the Chicken a Herbal Hug
Transfer the marinated chicken to a heatproof dish or shallow bowl suitable for steaming. Scatter red dates, goji berries, ginger slices, and angelica root over and around the chicken, letting the aromatics infuse every bite.
3. Steam to Juicy Perfection
Bring water in your steamer or wok to a rolling boil. Place the dish inside and steam on high heat for 20 minutes, or until the chicken is fully cooked through (no pink juices!).
4. Serve & Savor the Magic
The fragrant broth collected at the bottom is pure liquid gold โ pour it generously over steamed rice. For a final touch, garnish with a few extra goji berries or cilantro for color and freshness.
Red dates + goji berries โ add natural sweetness and antioxidants.
Ginger + angelica root โ warm and energizing, perfect for circulation.
Steaming โ keeps the chicken incredibly tender and succulent.
Canโt find angelica root? No worries โ the dish still shines without it.
Skin-on vs. skinless? Skin-on gives extra richness; skinless keeps it light.
Best served with: A bowl of steamed rice and a side of stir-fried greens for balance.
