Ingredients

For the Chicken & Herbs:

โ€ข 1 tbsp goji berries (ๆžธๆž) โ€“ soaked briefly in water

โ€ข 2-3 small pieces of angelica root (ๅฝ“ๅฝ’) โ€“ optional, but adds depth

For the Marinade:

โ€ข 1 tbsp light soy sauce
โ€ข 1 tbsp Shaoxing wine (or dry sherry)
โ€ข ยฝ tsp white pepper powder
โ€ข 1 tsp fish sauce (for umami)
โ€ข 1 tsp sesame oil
โ€ข 1 tbsp oyster sauce
โ€ข 2 tbsp water (to balance the saltiness)


Cooking Steps –

1. Marinate Like You Mean It
In a mixing bowl, combine all the marinade ingredients โ€” soy sauce, rice wine, white pepper, fish sauce, sesame oil, oyster sauce, and a splash of water. Add the chicken and coat it evenly. Let it marinate for at least 1 hour, or overnight for deeper, richer flavor.


2. Give the Chicken a Herbal Hug
Transfer the marinated chicken to a heatproof dish or shallow bowl suitable for steaming. Scatter red dates, goji berries, ginger slices, and angelica root over and around the chicken, letting the aromatics infuse every bite.
