โ€ข 4 cloves garlic, smashed
โ€ข 2 spring onions, cut into 2-inch lengths
โ€ข 1 red chili (optional, for a gentle kick)

The Sauce –

โ€ข 2 tbsp oyster sauce (the secret depth)
โ€ข 1 tbsp light soy sauce
โ€ข 1 tsp sesame oil (for that nutty fragrance)
โ€ข ยฝ tsp sugar (to balance)
โ€ข ยผ cup water or chicken stock
โ€ข 2 tbsp Xiao Xing wine (drizzled in the last 3 minsโ€”non-negotiable)
โ€ข Extra spring onions, sliced thin (for garnish)


Instructions :

  1. Soak clams in salt water for 20 mins to purge grit. Rinse well.
  2. Heat a claypot or heavy pot over medium-high. Add a splash of oil.
  3. Sear chicken (skin-side down first!) until golden (~4 mins per side). Remove and set aside.
  4. In the same pot, sautรฉ ginger, garlic, and white parts of spring onions until fragrant (~1 min).
  5. Return chicken to the pot. Add oyster sauce, soy sauce, sesame oil, sugar, and water. Stir to coat.
  6. Cover and simmer on low heat for 15 mins (until chicken is nearly cooked).
  7. Add clams on top, cover again, and cook 3-4 mins until clams just open.
  8. Drizzle wine over everything in the last 3 mins. Do NOT stir. Let the alcohol cook off, leaving pure fragrance.
  9. Scatter with spring onions and chili.
  10. Serve straight from the claypot (for direct serve-drama) with steamed rice.
