Fridge Hack for Spring Onions

Because Limp Spring Onions Are a Crime Against Stir-Fries

Letโ€™s be honest โ€” is there any ingredient more dramatic than spring onions? You bring them home, bright and full of promise, imagining all the ways theyโ€™ll elevate your fried rice, noodle bowls, and soups. For two glorious days, they stand tall and proud in your fridge. Then, seemingly overnight โ€” tragedy. They turn slimy, wilted, and suspiciously fragrant in the worst way.

I used to call them my โ€œone-night-stand vegetablesโ€ โ€” they looked great when I bought them, then completely disappeared the moment I actually needed them. Every time I reached for a handful of scallions, I was met with disappointment and guilt, scraping yet another mushy bunch into the compost bin.

That all changed the day I decided Iโ€™d had enough. Midway through prepping a fried rice dinner with what could only be described as emotionally damaged onions, I thought: there has to be a better way. Cue a late-night deep dive of kitchen forums, grandma-approved YouTube channels, and food blogs with questionable design choices. But somewhere between the scrolling and the swearing, I found it โ€” the ultimate hack to keep spring onions fresh, crisp, and vibrant for weeks. Not days. Weeks.

And now, dear reader, itโ€™s your turn. Iโ€™m about to share the simple, no-fuss method that rescued my stir-fries, revived my garnishes, and saved me from countless onion heartbreaks. Your scallions will never ghost you again.

The Hack: Store Them in a Jar with Water, INSIDE the fridge!

Yes, inside the fridge. Not on the counter. Not under a damp towel.

In a jar / bucket With water. Covered. In your fridge.

What You Need:

โ€ข A clean glass or jar or small bucket fits inside
โ€ข A little water (just enough to cover the roots)
โ€ข A ziplock bag or reusable food cover
โ€ข Your precious spring onions

How to Do It:

โ€ข Trim the roots slightly (if theyโ€™re dirty) and remove any yellow leaves.
โ€ข Stand the onions upright in the jar, roots down.
โ€ข Pour in enough water to just cover the rootsโ€”not too much!
โ€ข Loosely cover the top of the jar with a ziplock bag or food wrap.
(This keeps moisture in and fridge smells out!)
โ€ข Place the whole setup in the fridge door or a corner where they wonโ€™t get squished.
โ€ข Change the water every 3โ€“4 days, like youโ€™re babysitting a very leafy goldfish.

BOOM. You now have fresh, crispy spring onions for up to 3 weeks.
Theyโ€™ll keep growing too, like a tiny indoor garden that lives to garnish your noodles.

Why This Hack is a Game-Changer:

โ€ข No more sad, soggy spring onion mush in the veggie drawer.
โ€ข You save money and waste less (high five, eco-warrior!)
โ€ข You always have that essential โ€œfinal sprinkleโ€ for fried rice, noodles, soups, omelettesโ€ฆ you name it.
โ€ข You feel weirdly powerful watching them grow and knowing you beat the fridge system.
