Breakfast With Attitude – Flip It & Own It

You ever wake up, open the fridge, and itโ€™s justโ€ฆ vegetables staring back at you like โ€œwell, now what?โ€ Not enough for a full meal, too much to ignore. Thatโ€™s where these pancakes come in. This is the dish your random veggies have been waiting for. Crispy edges, soft center, salty-savory goodness that makes you feel like youโ€™ve got your life together (even if you absolutely do not).


Ingredients:

  • 1 cup all-purpose flour (the sturdy backbone holding this whole situation together)
  • 3/4 cup water (the smooth operator that turns chaos into batter)
  • 1/2 tsp salt (donโ€™t be shy, this is where flavor starts)
  • 1/2 tsp garlic powder (because subtle garlic is still garlic, and we respect that)
  • 2โ€“3 scallions, finely chopped (the green confetti of joy)
  • 1/2 cup mixed veggies like shredded carrots, cabbage, or zucchini (your fridge clean-out heroes)
  • 1 egg (optional) (adds richness, but you do you)

Steps:

Step 1: Batter Up

In a bowl, whisk together flour, water, salt, and garlic powder until smooth. Think thin pancake batter, not cement.
