Crispy Flatbread with Brie, Cranberries & Roasted Walnuts

Thereโ€™s always that moment when you want something that feels a little specialโ€ฆ but not โ€œspend two hours in the kitchenโ€ special.

Something warm, melty, slightly indulgent, but still effortless enough that you donโ€™t lose your mood halfway through.

Crispy flatbread, creamy brie that melts into everything, sweet cranberries, toasty walnuts, and a drizzle of honey that pulls it all together. Itโ€™s simple, but it tastes like you planned ahead. You didnโ€™t. Thatโ€™s the beauty of it.


Ingredients:

2 flatbreads or naan or pizza dough (your crisp, golden base that holds it all together)
1 tbsp olive oil (the quiet glow-up for the edges)
6 oz brie cheese, sliced (soft, creamy, melts like it means it)
1/2 cup dried cranberries (sweet, slightly tangy bursts of contrast)
1/2 cup walnuts (toasty crunch with depth)
1 tbsp honey (the sweet finish that ties everything together)
1/2 tsp fresh thyme leaves, optional (subtle, earthy lift if youโ€™re feeling it)
Salt & black pepper (balance everything out properly)
Fresh arugula, optional (peppery freshness that cuts through the richness)

Steps:

Step 1: Set the Base

Preheat your oven to 200ยฐC (400ยฐF).

Place flatbreads on a baking tray and brush lightly with olive oil.

Step 2: Build the Layers

Lay the brie slices across the flatbread and let them cover like a soft blanket.
