Thai Butterfly Pea Flower Tea

Some drinks wake you up. Some calm you down. And then thereโ€™s this one that makes you stop for a second and go, waitโ€ฆ did it just change color?

Deep blue at first, then a squeeze of lemon and suddenly it turns purple right in front of you.

Ingredients:

1 tbsp dried butterfly pea flowers (the natural blue color that steals the show)
1 1/2 cups hot water (just off the boil, not aggressively bubbling)
Juice of 1/2 lemon (the color-changing moment)
Honey or sugar, optional (a touch of sweetness if you want balance)

Steps:

Step 1: Brew the Blue

Add the dried butterfly pea flowers into a cup or teapot.
Pour in the hot water.
Let it steep for 3 to 5 minutes until the liquid turns a deep, rich blue.


Step 2: Strain and Taste

Strain out the flowers or remove them.
Taste the tea as it is. It will be mild, slightly earthy, and very clean.


Step 3: The Color Shift

Add a squeeze of lemon juice.
Watch as the blue tea transforms into a vibrant purple almost instantly.


Step 4: Adjust to Your Preference

Add a little honey or sugar if you prefer a sweeter finish.
Serve warm, or let it cool and pour over ice for a lighter version.
