They look intimidating, but theyโre actually very straightforward. Treat them right, and they reward you with that perfect contrast: tender inside, lightly charred outside, full of clean, deep flavor.
This is less about complexity and more about control.
Ingredients:
For the Octopus
- 1 kg large octopus tentacles, cleaned (thick, meaty, built for proper grilling)
- 1 small onion, halved (adds quiet sweetness to the simmer)
- 2 bay leaves (background depth)
- 3 cloves garlic, crushed (because garlic = life)
- 1 tsp black peppercorns (subtle heat and aroma)
- 2 tbsp sea salt (seasons the entire tentacle)
- 4 tbsp extra virgin olive oil (for coating and finishing)
- Juice of 1/2 lemon (fresh lift at the end)
- Lemon wedges (for serving)
For the Fresh Herb Sauce
- 1/2 cup fresh parsley, finely chopped (bright, clean, essential)
- 2 tbsp basil or oregano, finely chopped (herb depth, your choice)
- 1 clove garlic, minced (sharp edge)
- 1/2 cup extra virgin olive oil (smooth, carries the herbs)
- 2 tbsp lemon juice (cuts through the richness)
- Salt & black pepper (balance everything)

Steps:
Step 1: Build the Simmer Base
Fill a large pot with water and add onion, bay leaves, garlic, peppercorns, and salt.
Bring it to a boil, then lower to a steady simmer.
Step 2: Cook Until Tender
Place the whole tentacles directly into the pot.
Let them simmer gently for 45 to 60 minutes until tender.
Test by inserting a knife into the thickest part. It should slide in easily without resistance.
Step 3: Rest and Dry Properly
Remove the tentacles and let them rest for a few minutes.
Then pat them completely dry.
This step is critical. Moisture kills char. Dry surface = proper grill marks and flavor.
Step 4: Prepare the Herb Sauce
Whisk together parsley, basil or oregano, garlic, olive oil, lemon juice, salt, and black pepper.
Let it sit so the flavors settle and blend.
Step 5: Grill for Texture
Heat a grill or grill pan to medium-high.
Brush the tentacles with olive oil and place them down.
Do not move them immediately. Let them sear and develop char.
Grill for about 3 to 4 minutes per side until edges are crisp and slightly caramelized.
Step 6: Slice and Plate
Once grilled, slice the tentacles into thick pieces at an angle.
Arrange on a plate, drizzle with olive oil, and finish with a squeeze of lemon.
Serve with the herb sauce on the side or spooned lightly over.

After simmering, you can chill the tentacles for 30 minutes before grilling. This firms them up slightly and helps achieve a cleaner, more defined char without overcooking the inside.
