Honey Mustard Chicken with Roasted Asparagus & Cheese

Letโ€™s be honest โ€” chicken breasts donโ€™t always steal the show. They can be a little plain and forgettable on their own. But coat them in a rich, tangy honey mustard glaze, and suddenly theyโ€™re the star of the plate. To balance things out, weโ€™re adding roasted asparagus with a touch of melted cheese โ€” because even veggies deserve a little indulgence.


The Glazed & Cheesy Weeknight Hero
INGREDIENTS :

  • 4 chicken breasts (or thighs if youโ€™re anti-dry meat)
  • 4 tbsp honey (the sweet glue of dreams)
  • 3 tbsp Dijon mustard (for that fancy tang)
  • 2 garlic cloves, minced (because garlic = happiness)
  • 1 tbsp olive oil (for searing glory)
  • 1 tsp salt (season like you mean it)
  • ยฝ tsp black pepper (tiny spice kicks)
  • 1 tsp dried thyme (optional, but makes you look ~cheffy~)
  • 1 bunch asparagus (woody ends snapped offโ€”no one likes twigs)
  • 1 tbsp olive oil (for crispy roasting)
  • Salt & pepper (basic but essential)
  • ยฝ cup grated cheese (Parmesan for classy crunch, mozzarella for melty strings)

Method :

Make the Honey Mustard Love Potion

  • In a bowl, whisk together honey, Dijon mustard, garlic, salt, pepper, and thyme.
  • Reserve 2 tbsp (for that final glossy brush of glory).

Marinate the Chicken

  • Dunk chicken breasts in the honey mustard mix (or use a ziplock bagโ€”less mess).
  • Let it chill in the fridge for at least 30 mins (or up to 2 hours if youโ€™re patient).

Roast the Asparagus

  • Preheat oven to 200ยฐC (400ยฐF).
  • Toss asparagus with olive oil, salt, and pepper. Roast for 10-12 mins until tender-crisp.
  • Sprinkle cheese on top, return to oven for 2 mins until melty and golden.

Sear & Glaze the Chicken

  • Heat oil in a pan over medium-high heat.
  • Cook chicken 6-7 mins per side until golden and cooked through (no pink, folks).
  • In the last 2 mins, brush with reserved glaze for a sticky, caramelized finish.
