Nasi Goreng Indonesia

Midnight Magic Fried Rice – Indonesia style

You know that specific kind of hunger.

Not polite hunger. Not โ€œIโ€™ll wait.โ€
Iโ€™m talking about standing in front of the fridge at night, staring like something in there is about to volunteer itself.

And then you see it. Leftover rice.

This is where legends are made.

Because Nasi Goreng is not just fried rice. Itโ€™s resourceful, bold, slightly chaotic genius. Sweet, savory, smoky, and topped with a fried egg that says, โ€œYes, you absolutely deserve this.โ€

Ingredients :

  • 2 cups cold, leftover rice โ€“ the slightly dry MVP (fresh rice is too clingy, we need independence here)
  • 2 cloves garlic, minced โ€“ the flavor starter pistol (because garlic = life)
  • 1 small shallot, chopped โ€“ the sweet depth-builder
  • 1โ€“2 tbsp kecap manis (sweet soy sauce) โ€“ the glossy, caramel-like superstar (this is the signature move)
  • 1 tbsp soy sauce โ€“ the salty backbone
  • 1 tsp chili paste or sambal (optional) โ€“ the spicy rebel (add if you like a little drama)
  • 1 egg (for frying) โ€“ the golden crown on top
  • 2 tbsp cooking oil โ€“ the sizzle fuel
  • A handful of chopped green onions โ€“ the fresh confetti
  • A pinch of salt and pepper โ€“ season like you mean it

Optional but excellent upgrades:

Cabbage or carrots โ€“ the crunchy side characters

Cooked chicken, shrimp, or sausage โ€“ the protein power-up

Steps :

Step 1: Wake up the wok

  • Heat your pan or wok until itโ€™s nice and hot.
  • Add oil and let it shimmer like itโ€™s ready for action.

Step 2: Build the flavor base

  • Toss in garlic and shallots.
  • Stir and let them sizzle, bloom, and smell incredible.
  • This is the moment your kitchen starts turning into something special.

Step 3: Rice goes in, attitude included

  • Add your cold rice.
  • Break it up and toss it like you mean it. No clumps allowed.
  • Let it fry a bit so you get those slightly crispy bits (this is where the magic lives).

Step 4: Sauce it up

  • Pour in:
    • Kecap manis
    • Soy sauce
    • Sambal if using
  • Stir everything together until the rice turns that deep, glossy brown and smells like pure comfort.

Step 5: The final toss

  • Add green onions and any extras youโ€™re using.
  • Give it one last confident toss. Taste. Adjust seasoning.

Step 6: Crown it like a champion

  • In a separate pan, fry an egg until the edges are crispy and the yolk is still runny.
  • Slide it on top of your rice like the royalty it is.

Street-food secret :

Let the rice sit undisturbed for a bit in the pan before stirring. That slight char? That smoky flavor? Thatโ€™s what separates โ€œhome fried riceโ€ from โ€œwaitโ€ฆ this tastes legit.โ€
So crack that egg, break that yolk, let it run into the rice, and eat like someone who knows exactly how to win in the kitchen.
